our story

New Rivers was founded on the first day of Spring in 1990 in the historic Cogdon and Carpenter Iron Merchant warehouse along the Providence River. Beau and Elizabeth Vestal now man the helm and continue to keep the vision of New Rivers going strong; now entering its 33rd year.

Beau joined the kitchen team in 2000 and Elizabeth in 2009. The two married and purchased the restaurant in 2012 with Beau remaining at the stoves and Elizabeth transitioning to the front of house. The restaurant has been and continues to be a forerunner in the local farm to table movement; using local farms, dairies, fisheries, wineries, and breweries to craft their seasonal bistro style menu.

our philosophy

at new rivers our philosophy is simple: get great ingredients, make as much as we can from scratch, and let the seasons dictate our cooking. from our charcuterie program to our house made pastas, we use traditional techniques and methods to create our menu and think that handmade and process driven cooking is a truly worthwhile endeavor.
